
☕ Delicious Coffee Cream Cake
A light, fluffy sponge infused with coffee and topped with creamy coffee whipped frosting — perfect for coffee lovers!
🧁 Ingredients
For the Cake:

4 large eggs
-
150g granulated sugar
-
150g all-purpose flour
-
1 tsp baking powder
-
2 tbsp instant coffee dissolved in 2 tbsp hot water
For the Coffee Cream:
-
200ml cold whipping cream
-
2 tbsp instant coffee
-
2 tbsp sugar
Optional Decoration:
-
Coffee beans
-
Cocoa powder for dusting
👨🍳 Instructions
1️⃣ Make the Cake:
-
Preheat your oven to 180°C (350°F). Grease and line a round cake pan.

In a large bowl, beat the eggs and sugar until the mixture becomes pale, thick, and doubled in volume.

Stir in the dissolved coffee until well combined.
-
Sift in the flour and baking powder, folding gently to maintain the airiness.

Pour the batter into the prepared pan and smooth the top.

Bake for 25–30 minutes, or until a toothpick inserted in the center comes out clean.

Let the cake cool in the pan for 5–10 minutes, then transfer to a wire rack to cool completely.
2️⃣ Prepare the Coffee Cream:

In a chilled bowl, beat the whipping cream, instant coffee, and sugar until stiff peaks form.

Keep refrigerated until ready to use.
3️⃣ Assemble the Cake:

Once the cake is fully cooled, carefully slice it horizontally into two layers.

Spread half of the coffee cream over the bottom layer.
-
Place the top layer over the cream, then spread the remaining cream over the top and sides of the cake.
4️⃣ Decorate & Chill:

Garnish with coffee beans and/or a dusting of cocoa powder for a beautiful finish.

Chill the assembled cake for at least 1 hour before serving to allow the flavors to meld and the cream to set.
