1 vanilla bean (split and seeds scraped) or 2 tsp vanilla extract

1½ cups fresh strawberries (hulled and chopped)

In a medium saucepan, combine milk, sugar, and vanilla bean seeds (add pod too for more flavor).

Heat gently over medium heat until the sugar is fully dissolved—do not boil.

Remove from heat, discard the vanilla pod, and let the mixture cool to room temperature.

In a bowl, toss the chopped strawberries with lemon juice.

Let sit for 15 minutes to release juices and enhance flavor.

Stir the heavy cream into the cooled milk mixture.

Cover and chill in the refrigerator for at least 4 hours or overnight.
β 4. Churn the Ice Cream:

Pour the chilled base into your ice cream maker and churn according to the manufacturer’s instructions.

In the final 3–5 minutes of churning, add in the macerated strawberries.
β 5. Freeze Until Firm:

Transfer the churned ice cream to a freezer-safe container.

Cover and freeze for 2–4 hours until firm and scoopable.
